Boiled.peanuts

Been boiling peanuts for about 3 hours. They soft inside the shell. What's the ideal consistency?

They're done man, they need to soak for a few hours to get the right consistency.

i don't like mushy. rather a little resistance to the tooth...personal preference.

Didn't quite know when to shut the boil down. Like they are good now to take out and eat. I'll kill the fire and let em soak then.

When they're soft enough for your preferred texture they are ready to soak. They pick up a lot of flavor in the soak part.

I did 3# in the instant pot last Sunday
70 minutes with natural release (another hour or so)
Absolutely perfect
Won’t do them another way

Like several have already said, I like to soak mine (overnight for me) after they are done. During that time, they pick up salt and just get better.

Best I ever had was on an extended family vacation with several family units in one giant beach house. I cooked a bunch of shrimp and blue crab, then instead of tossing out the stock, my BIL boiled a bunch of green (fresh) peanuts in it, he's the expert peanut cooker, I don't know times or soaks. But I do know they were the best boiled peanuts I've ever had. Problem is they don't store like regular boiled peanuts, they go rancid in 48 hours. Don't cook more than you need with this method.

Love me some boiled peanuts. I like them softer consistency.

I feel like that water would been a breeding ground for bacteria if you let them soak overnight.

I soaked them for about an hour beforehand in enough water to cover them plus an inch or so

3/4 cup salt and about a tablespoon of Tony's

Any estimates on how much salt I’ll need?

I’ve never boiled more than 8 pounds at a time before.

I'm sure you could freeze them to heat up and eat at a later date. I have done that with regular salted boiled ones.
