I get a free day of track instruction in Park City, UT, or Asheville, NC. A day is worth $1700 retail, but most of the reviews I'm seeing are at least three years old, and focused on the Raptor off roading. I'd being doing the road/track version. I have until summer next year to take advantage of the offer, and the recent South Dakota thread got me thinking that I might be able to do the Park City offering and go mess around up there.
However, I also know you can drive your own vehicle on the track in Austin (or at least one of my partners did a decade ago). I'm less interested in driving a super car than I am becoming as bulletproof as possible driving my ST to the limit of stupidity.

Not Ford, but I’ve been to Ron Fellow’s school in Pahrump, NV several times, Austin, TX’s COTA a couple times, & Texas Motor Speedway ‘bout a half dozen times. Gotta be the most fun a guy can have with his pants on…

Porsche has several "driving experiences" around the US. These aren't necessarily a driving school. There's one in Atlanta at their NA headquarters right next to the airport. I've done that and it's a blast. You can pick your car and drive for around 90 minutes with one of their drivers in the passenger seat giving tips, etc. They'll take you for a few laps at the end too if you want.
I did this maybe 7 or 8 years ago for a friend's birthday. I drove one of the 911's. They have some off roading as well if you want to drive the SUV. It's pretty incredible how hard you can drive those cars.

Beautiful place . It’s only a few miles from Talladega Superspeedway. That’s worth a visit youve never been .
