Fermented Squash pickles and Cucumber pickle. My new favorite!

Since the garden is coming in, I decided to try fermentation this year instead of pickling with vinegar base. I put these together four days ago as a trial run and they have been fermenting on my countertop since then. The squash is amazing and the cucumbers could go one more day. Still crunchy and acidic and so much depth of flavor compared to vinegar base. I’m sold. I already have a Japanese eggplant/cucumber fermented pickle recipe lined up. But need some fresh ginger first.
Both of these jars are different recipes that I pulled off google and substituted a few things such as Fig leaf in the cucumber pickle. It’s truly amazing how much more complex the flavors are
Squash pickle (includes fresh basil, fresh hot banana pepper, homegrown garlic, red onion and fresh okra)
Cucumber pickle (with homegrown dill, jalapeño, red onion, and hot banana pepper and fig leaf)
With sesame seeds
Note: next time I am going to take the seeds out of anything I pickle no matter the method. Seeds are worthless.

Bought some mason jar kit to do this. Looking forward to playing around with it.

I've been researching through videos and reading on how to start fermenting, and I plan to enter the game myself. I have some whey that I separated from yogurt recently, and my first adventure will be fermented grape juice soda. (I guess technically my first was making fermented homemade mayo, but that was a very short fermentation strictly to make it storable for an extended amount of time). I plan to do some Kvass (soda from fermented fresh fruit) and hot sauce with my pepper garden when it starts blooming, plus I have green beans in the garden I will ferment.
What you made here looks killer. I'm trying to be patient, but I may go buy some from the farmers market. This is my first time doing a veggie garden, so I do expect I will have some failures growing. My beans just started sprouting from seed (regular, purple and dragon tongues are what I'm growing)

What's the benefit of the tube gas release system you used vs the silicone nipple setup? I was going to get the silicone ones. I can see it leaking when gas escapes, but is there any other reason to go with the syringe looking thing you used?

I'm not sure what the silicone nipple setup is, but I bought this mason jar fermenting kit off amazon. It's an air lock system to only let gas out and prevent oxygen from getting in. I also bought glass weights to keep everything under water. I may get a larger fermenting vessel to make a big batch of sauerkraut or kimchee next.

Same principle. I think your setup is designed to capture liquid that escapes with it. I've seen others on here in previous threads using your setup. I'm going to do more research on these and see some pros and cons of each.

This is the kit I bought. Have a bunch of bush beans and peppers that I'm looking forward to fermenting.
