Leaving food out overnight seems to be a regular occurrence with people on this thread.
I am interested to know the demographics of the posters that say to heat it and eat it.
Single, no kids is my guess.
Married two kids, turn 40 in Nov. Leaving food out isn't a normal occurrence in my household, but that doesn't mean I'm automatically throwing something out after 4 hours because some nerd here says to.

I bought sliced deli ham at Rouses last night only to wake up this morning to find I forgot it on the counter. Made 4 sandwiches for me, the wife and 2 kids. Life is only worth living when living on the edge!
As for leaving gumbo out all night:
Have those of you saying don't eat it ever been to a party with food out on the counter? Do you not eat that? shite stays out for hours on end getting consumed by people, and this really isn't any different. Actually it's safer since you don't have filthy hands digging into it for those hours. It sat undisturbed after cooking for hours.
Eat it. If you get sick, then flog yourself for your weakness.
