Ideas to use home grown herbs

Spring has sprung and my herbs are a booming.
Unfortunately they are starting to crowd each other a bit and it's time to harvest a bit of each.
I'm looking for ideas for:
Sage
Greek oregano
German & English thyme
Orange Mint (TONS of this)
Also would love to see any you are growing or using in your kitchen

Sage: butternut squash ravioli with brown butter/sage sauce.

I like to cut up mint leaves and use them when brewing homemade iced tea. It adds a bit of a kick to the tea and is very refreshing.
All herbs can be dried and crumbled up for later use. I use my dehydrator to do this for small batches.
For larger amounts like when I cut back my sweet basil plants, I bundle up the stems and wrap that bundle in an old sheet and hang it in my shop to air dry, and once dry I'll remove the dried leaves off the stems and crush it up to go in a container in my herb cabinet.

I had a mint plant that took over the little courtyard we had at our old house. I'd weed eat it down and open 2 windows. With the wind and breeze through the house, it made an incredible air freshener.

This is the very reason why I NEVER put mint in the ground and only grow it in large pots. At least that way it can be contained, otherwise it WILL take over wherever it is planted.

Can always make herb tea. I drink a LOT of mint tea, it’s good for digestion and nausea. Thyme and sage teas are interesting.
Can dry the herbs to preserve them or bundle fresh with a thread around several leafy stems.
