That is not a job that would allow him to stay in Louisiana.

This is bad advice.
Major in a core engineering discipline. The biomedical companies are not recruiting from LSU either. Mechanical, Chemical, Electrical, or Civil are the engineering disciplines to major in. You can also move into supply chain after learning the business as an engineer.
Not to be mean, but the people who upvoted biomedical are ignorant.
Healthcare is good, but competitive to get into. I would avoid just majoring in Biology unless you plan on being perfect in undergrad to be competitive. Come up with a backup plan. Major in something that has a better exit strategy if it doesn’t pan out such as a core engineering. FWIW, upper end nursing (like nurse practitioner) wages are getting eroded by nursing school diploma mills.
If you go into a hard science expect to go to graduate school/professional school. Compete to get into a good one. Undergrad doesn’t have to be more prestigious than LSU.
Data science is an add-on and not a core thing. A data scientist is just a resource if they are not a process expert. Technology will continually make tools to make it easier for others to do these correlations and analysis.
