We don’t have many good options for andouille. Publix used to carry Savoie’s but I haven’t been able to find it lately.

I think he was just joking about Conecuh being terrible.
Your issue is likely coming from the flour or the oil. My grandmother thinks the amount of roux “we young generations” use is insane.

It's very fatty. Probably the greasiest sausage I've ever encountered. I don't like it at all in gumbos, or pots of anything for that matter. It's alright grilled or split and cooked in a skillet.

Also, at Publix, look for Pacific brand low sodium broth. We swear by both the low sodium chicken and low sodium beef broth.
