and after the system primes (and shows pressure), the pressure falls to zero, while still moving water. skimmers are clear - any idea my issue here? TIA

Live in CLT area, been cold but nothing crazy.

Where is the pressure gauge? Any valves in the system that may be opening/clsoing?

If the pumps are on and water is flowing, you have pressure on the pump discharge.

The new motors will operate at a higher RPM to prime the system and then lower RPMS. You should be able to select how many RPMs the pump is operating at. It could just be set too low to register any pressure

Mine does the same. Since you are a new owner, check out troublefreepool if you haven't already. It will save you thousands in chemicals.

mine did this last week. skimmer was clear, everything was running, but there was air in the lines and the pressure was at zero. turns outs the water level was low. Someone turned off my autofill. it was only like an inch or so low, so nothing crazy. after it got back up to the right level, it was fine.

Is your pump above or below the water level of the pool?

ETA:

Sometimes the cause is an obstruction between the strainer basket and pump. This can happen when a high volume of leaves dislodges the strainer basket and flows into the inlet below.

Amazon sells a Drain King #345 bladder that fits your garden hose, designed to clean pool drains.

This bladder can sometimes dislodge a deep clog if inserted and pressurized in the opening below the strainer basket.
