If you're into beer, the Yard House. There's one in the promenade between Flamingo and Linq.

Great little breakfast and lunch place a mile from the Strip. Mr. Mamas. Cicken Fried Steak was rockin'! Best of all, the prices are realistic.

Had a great experience at Milo’s in the Venetian. It’s a Greek restaurant where you pick out your fish from the ice bar and they will prepare it then cut and serve it at your table. Bring your wallet.
Really enjoyed Amalfi at Caesars as well. China Poblano is a cool Mexican/Asian fusion place at the Cosmo, it’s a good lunch option. Great margarita.

Prayers sent. That place is a mess with Formula 1 still prepping for the upcoming race in November.
I love to get off strip via Uber/Lyft and head over to Chinatown on Spring Mountain Road. Lots of brilliant choices of incredible Asian food, and you can eat like royalty for local's prices. Being closer to the Pacific Ocean, Las Vegas is teeming with quality Asian food. Also consider the Hofbrauhaus by the Virgin for a fun German experience with live music.
ETA: Merely suggestions, not must try places. Have fun!
Or as Paul has mentioned, Craftsteak at MGM. Over a decade ago it was my first Wagyu steak and it didn't disappoint.
