eta: I am too lazy to make real (hand issues make peeling/cutting veggies a challenge) and don't like instant so Bob Evans was a game changer. I also saw them here and tried them.

These are pretty good.
I have no problem with instant potatoes, but I grew up eating them. My mom was an ER nurse so always kept them around to make a quick meal after a 12 hour shift. So they are just something I've always been used to eating.
I'm not a big lunch eater, but still keep the little cups around if I want a quick bit. Same with Easy Mac.
