Alligator leg recipe

We killed a 8’10 last night. The tag holder took the tail and other cuts. How should I prepare the legs?

Black iron pot smothered down in a gravy, or sauce piquant is the way to go.

I had them at Grand Isle (the restaurant) in NOLA once served as alligator "wings". Very tough. I agree with the gentleman that said stew them.
