The hardest part will be configuring the AT&T gateway to turn off its wifi and routing and put it in passthrough mode.

This is the part that has me frozen.
I had to do this for my sister (no pics, and she's too old for most of you) and it is really no different than getting into the old AT&T Uverse Gateway. There is a tag on the bottom, or back of your gate way that will have the username and password. The gateway has a dedicated IP of 192.168.1.254. Enter that into your browser and it should prompt you for the username and password. Once you are in it is no different than any other modem router combo. Just navigate to the WiFi section and turn off both the 2.4 and 5 Ghz radios. If you have any smart switches, dimmers, Echo devices etc. on your network, just configure your new router with the same SSID and password that was setup in the gateway. Restart and you should be good to go.

Will need to put it in IP passthrough mode as well.
