Add the onions, garlic cloves, and any additional seasoning you prefer to the pot. Let the mixture come back to a boil and simmer for about 10 minutes to allow the flavors to infuse the water.
Add the potatoes and cook for about 10 minutes until they start to soften slightly.
Add the smoked sausage and corn to the pot and cook for an additional 5 minutes.
Carefully add the live crawfish to the pot and cook for about 5 minutes or until the crawfish turn bright red and float to the top. Be cautious not to overcook the crawfish, as they can become tough and rubbery.
Once cooked, turn off the heat and let the crawfish soak in the seasoned water for about 10 minutes. This allows them to absorb the flavors.
Drain the crawfish and other ingredients from the pot and transfer them to a large serving platter or table lined with newspapers or butcher paper for easy cleanup.
Serve the crawfish boil with melted butter, additional Cajun seasoning, hot sauce, and lemon wedges for squeezing over the crawfish.
To eat the crawfish, twist and pull the tail from the head. Pinch the tail and gently pull to remove the meat. Enjoy!
Remember to provide plenty of napkins, paper towels, and maybe some wet wipes for guests to clean their hands while enjoying the crawfish boil. And don't forget to have a cold beverage on hand to wash it all down!
