I imagine the Mad Max remake has some good ones. A lot of that was practical IIRC.

Building all those office towers only to blow them up at the end of Fight Club is a baller move.

The mansion they blew up in Bad Boys 2 was real. Someone with too much money bought the property but wanted to get rid of the house and build a new one. The producers found out about this and called the property owner and said why don't you let us blow it up instead. They had cameras covering every angle, including a few on helicopters, because it was a one time only deal.

Not an explosion necessarily, but flipping the 18 wheeler in Dark Knight was really cool.
