Do you keep playing after you've beaten the main story?

Almost all the legendary pokemon can only be captured after you're done. At that point, there doesn't seem like there's too much to use them in.

I know the point is to complete the Pokedex, but that feels shallow to me if that's the only reason to keep playing.

Am I missing something other than just battling online?

Most of the end game is designed to support online competitions. And there is an absolutely stupid amount of stuff you have to do to be successful at that.

For Violet, I completed the post-game quests to unlock the remaining legendaries and the high end raids. I completed the Pokedex to get my Shiny charm. I built a breeding team, a gold farming team and a raiding team, and then I bred a ringer team for Scarlet so I didn't have to make due with garbage I found in the wild.

I don't compete online anymore so I usually run out of stuff to do around that point, and only play when my nephew wants to play together. He likes raiding and hunting shiny Pokemon so a lot of what I have is designed to help him complete his own Pokedex and help him raid for limited time event pokemon.

I'll pick it up again when the DLC comes out in the fall.

All of the games have post-elite 4 content. Some have a ton of post-game content like legendary pokemon, secret dungeons, and crazy strong trainers that you can’t fight until after you beat the game.

Remember, the goal of the game is to fill the pokedex.

Pokémon really missing out on a New Game + option that would let you start with whatever level 5 Pokémon you want or had captured in the previous game

This would only work if it incorporated enemy upscaling. Otherwise, it would be a joke.

Playing through Scarlet now. Man, I wish Nintendo would allow mods and release a creator kit (a la Skyrim). Game is fun so far but seems kind of shallow. And painfully easy unless you implement some self imposed restrictions. I've started by building a team made up of local pokemon only for each zone. Train them up a little from wild and hit the gym/base/Titan.
