I did a cookoff a few weeks ago and had to prepare for 100 servings. I used my 10g pot and had leftovers. It was 80% full I believe.
If you fill that 10g, you should be fine. No one is going to punish you for running out.

Id would imagine 4-6 ounces per taster, and I have always found that unless you attract everyone at one of those things you arent going to get the 200, more like 100.

I do a school cook off and teams are expected to cook 5 lbs of rice for pastalaya or jambalaya. Serve the dishes in 6oz sampler cups

I used the calculator and it was spot on. I just added cream of onion, cream of celery and cream of mushroom to make it creamy and different from the other pastalayas.

Is it a meal ? 8z or just a taste 2z. Whatever number they say it will be less. Not everyone will try everything. Remember pasta weighs 2x as much after its cooked.

Piggy backing off this thread- is leftover blackened chicken an acceptable ingredient in Pastalaya instead of sausage?

If you want to cook a meal on your stove at home, you can get away with no sausage. Sausage gives the jambalaya or pastalaya so much flavor.
