Favorite Restaurant in Paris?

I will be in Paris for an evening before departing for Normandy. We'd like to get one excellent meal before we leave. Just classic French food and wine. My initial thought was to look at the Michelin list and make a pick from there, but figured I should check here first.
Location isn't a big issue, we are staying near the Arc de Triomphe and can take the subway pretty much anywhere.

The wife and I really enjoyed Le Train Bleu. The food matched the atmosphere. Excellent!

Second this. Excellent meal and reasonably priced for how amazing it is. We didn’t drink but for me n Mrs jkyle it came out to about 120 USD with tons of appetizers and tip. Here’s a pic I took when I was there a few weeks ago. It’s a beautiful restaurant and food was delicious. Try the sampler of cheeses and take their recommendations.

It is hard to make a recommendation for one dinner in Paris because there are an uncountable number of fantastic restaurants there.
Two of our favorite traditional gourmet French bistros are Chez Georges on rue du Mail and Chez Monsieur near La Madeline.
I call Chez Georges the Galatoire’s of Paris because it is fun and lively and the food is delicious. And the long, narrow dining room with mirrors on the walls is atmospheric. We usually go there on our last night in Paris.
Chez Monsieur in the 1st came to mind because I just recommended it strongly to some friends of mine who are going soon but they are staying near there.
If you are looking for something a little more casual, I like Juvenile’s near the Palais Royal. Have cocktails at Willi’s Wine Bar around the corner, then walk over to Juvenile’s although Willi’s is also a good restaurant. We usually head there on our first night.
Le Train Bleu is the popular suggestion here. I have never eaten there but we did stop in for drinks when we arrived at the train station in the middle of the afternoon after a visit to Fontainbleau. It is a beautiful place.

I'm guessing you're staying in or near the 7th arrondissement. When you're staying in hotels in that area, I'd just ask them. I asked for a boulangerie for my 6 year old daughter, and it was so good she decided she wanted to become a croissant when she grew up. She didn't even want pain du chocolat, she was that amazed with the hotel suggested boulangerie croissants. The flakes she left in the room while eating that magic terrorizes me to this day.
You can stay in the 7th and be in a Holiday Inn (I think) but French hotel hospitality is not American/Canadian like, where they tell you where the Burger King is. I have a history with a particular hotel, where I emailed them and they set stuff up without me asking, merely because I was interested in it it. Ask the concierge. Unlike in certain countries, I don't think staff in that area in major hotels are subject to outside influences like a Residence Inn in El Paso would be.
There is so much within walking distance of you at the Arc it's stupendous. I'm weird, but none of the dinners I had in Paris, were nearly worth sitting on the Seine eating apps, lunches, and drinks over a series of hours. If the place has a menu in German, keep walking. If it has more than French and one other language other than English, keep walking.
If you're going to take a lady, take a cruise of the Seine for dinner. There are multiple bars/restaurants you can get to go food from at the departure point near the Notre Dame. By to go, I mean, attached to the dock. I'd probably eat dinner before getting there, but you've only got one night, and you want to hit the boat at twilight, not late at night.

Honestly, it is hard to have a bad meal in Paris. From our trip in November we just avoided anything that was obviously tourist and < 3.5 stars on google.
My best memory was waking up before the family and walking to a local bakery and grabbing croissants and bread for the morning.
If you are looking for specific fancy meal, above notes are a great place to start.
