If you are someone with the means to go to Europe frequently do less. If this is like a once or twice in a lifetime thing do more imo. It's all about your preference though. Do you like to be on the go and do/see a lot of things or just like to relax and take in a few?

I'm more interested in the latter though and we have three young children so it's super expensive and probably something we could once or twice while they are growing up.

We are planning 15 days next summer flying from ATL to Amsterdam for a couple of days, train down to Munich for 3 days during Euro 2024, flight to Barcelona for 3 days , train/bus to Pamplona for 2/3 days for Running of the Bulls, then up to Paris for 4 days with day trips to Normandy and Mont St. Michel and flying back out of Paris. Really hoping it all works out.

That's way too much of an itiernary with three young kids. You're going to feel like (and you will be) constantly traveling.

How can you possibly do all of that in 15 days?
I would love to be in Pamplona for the Running of the Bulls. I would do that, then go to Barcelona. Barcelona to Paris is an easy train ride. Rent a car in Paris and drive to Bayeux. Take an Overlord Tour of the D-Day Beaches one day. Drive to Mont St. Michel the next day. Relax in Bayeux the next day. Then drive back to Paris for the rest of the time.

I would at least skip Amsterdam and fly directly into Munich if the Euros and running of the bulls are the 2 main things you want to do.
