How would particular industries/fields being more prone to use NCA’s demonstrate the pointlessness of NCA’s?

As an employer, I strongly disagree. If I am going to invest time and money into someone, I want some assurances that I will see an ROI on that.

FYI, some non-compete time frames reduce based on your time employed. Say you work for someone for 10 years thus they have seen a return on their investment then your NC may be null and void. It is all negotiable.
