Great trip.
We spent a week there last year before the LSU-UCLA game. We were there when Hurricane Ida hit.
It is a small town with some excellent restaurants, all of which are within a block or two of the town square. The wineries are a short drive from town.
We stayed at the Paso Robles Inn, a nice hotel right on the Square.
I do have some very good winery and restaurant recommendations for you. I will post them tonight when I get home and have access to my notes.
I also started a thread on here prior to my trip and got some good feedback.

We did only 1 full day in Paso...will definitely go back one day....
Vineyards we hit up
-DAOU (def hit this one up, on a Mountain overlooking everything)
-Halter Ranch (near DAOU, not as fancy)
-Brecon Estate (more laid back of the 3)
All 3 are 5-10 min of each other. Easy to do if you are tasting and not "getting drunk". Reminder, we did ours around COVID times so some of the "extra" stuff wasn't offered to us, but even without.... these are all within such a close area and not far from downtown Paso as well.

Eberly Winery. Owner played football at Penn State but got a graduate degree from LSU where he learned to make wine. Very nice place and good wines too

Booker is one I would look at.

No, he learned cellular genetics at LSU, winemaking at Cal Davis.
But they do make good wine at Eberle Winery.

We were there last year the week before Labor Day.
We loved it as a smaller, more countryfied version of Napa Valley.
We went to a bunch of wineries including the following-
Daou was our favorite. Fantastic wines in a gorgeous
setting. It is on top of a small mountain overlooking the vineyards. We spent the whole afternoon there one day. You need reservations well in advance. If you join their wine club (we did) you get the tasting for free as well as discounts on wine and extra perks.
Our second favorite was Calcareous. Smaller place but the wines are excellent and the people are friendly. We had lunch there.
Justin has a nice tasting room with patio seating in the gardens.
On the road to Cambria and the coast are two very good wineries right across the street from each other - Donati and Turley. Niner is also down the street.
Paso Robles restaurants -
BL Brasserie (French)
La Cosecha
Il Cortile
Buona Tavola (Italian)
Tow good casual hangouts are -
Taste Tapas Bar, and the Rooftop Wine Bar at the Piccolo Hotel.
Great restaurant town. There may only be a dozen or so of them to choose from, but that is all you need.
All of these places are on the Town Square or within a block or two of it.

Eberly Winery.
This was on our list but is on the other side of town, so we stuck with what was in the same prox.
I would def rec this one as well.

Funny, I thought Daou and Halter Ranch sucked.
Best tasting wine is Fratelli Perata but it’s a little family owned hole in the wall. L-adventure was also great.
Agreed that Justin is a must stop.

It could... I'm not a massive wine connoisseur, so I guess meh, but the prox of the 3 together is what also led to ours.
DAOU is now becoming bigger and bigger I see as their wines are now in local markets here in Louisiana.
I would say from that region DAOU and Justin are the 2 BRANDS you see on the shelves.

Daou is a great tasting wine. However, I felt they were just uptight assholes compared to the rest of the region.

That could make sense to how I said as we went through those 3 that was one of the "nicer" spots...
We had a great experience with the ppl that dealt with us during the tasting, but I definitely can understand where you are coming from.
