How much turkey stock can you make…

From a 11# Turkey carcass?

Recipes online are vague but I’ve been able to stretch a carcass to make 3 quarts or so(typically a 12-14#) with the stock still being flavorful. Guess it may depend on how much seasoning and other produce you put in…?

Is my math off?

Are you talking about water added or the amount of broth left after reduced?

Get about 2Iah gallons off a big bird. 15-20 lbs.

I make a gumbo every year with a 15 lb carcass. About 1.5 gallons of stock.

It depends on how strong you want it. The problem with making a stock with roasted bird is your limitation on reducing because of the seasoning that was on the original bird. You can always add chicken carcass to it to fortify flavor.
