Back in the 90's we were killing a lot of snow geese and you know what they taste like. We breasted about 40 of them one day and took them to one of my hunting partner's deer processor and told him to make sausage out of them. It came out real good but all I know is that he used pork mixed in and his deer sausage seasoning blend.

I have twice. Used the Hank Shaw recipe Hat posted as a guide. It turned out pretty good. One batch I kinda jacked up when I was smoking them (got it hotter than I should have). The other batch I just left "green" and it was good.

I don’t know the exact recipe,but I had some sausage made from deboned coots. It was actually good sausage, contained coot breast, bacon, green onions, garlic, salt and cayenne pepper. I’ll see if I can get the amounts of each, should work just as well or better with duck.

I had some one time made from the smoke house in Thibodeaux. I had it mixed with rib eye trimmings and it was damn good.

Had a caterer make goose boudin for us one time. Duck boudin would probably be pretty good

I've had it made at Benoits several times. It's usually a combo of canadas, snows and ducks. Very good. Scan meat for shot, steel shot and teeth aren't a good mix.

My usual recipe: “duck down here and taste it.”

Never made any, but tried a few over the last few years. Best one I’ve had was a cane syrup mix.
