Friend of mine who is a vet showed me how to clean one without opening the cavity.

Cut out the backstraps
Cut out the shoulders and then hams
Go in through the side by the back legs and get the tenderloins.

I do this plus cut a lil hatch in the ribs to get the heart out. You cut the ribs where they join the clavicle and peel them back.
