My opinion only. A chimney gets the coals too hot too fast. I find it harder to regulate the temp. Sure, if I was just going to get it super hot (700*) to grill a steak it would work for sure. However, if I am smoking ribs at 225* I don't want to overshoot, because ceramics are hard to bring the temp back down.

There is a smaller chimney that you should consider investing in that should solve your overheating problems. Also cotton balls soaked in alcohol work great as fire starter for grill. If you have a chimney save your toilet paper things. They work great as starters. Too

As someone else said, the Weber is the most versatile grill out there. I've done brisket, chickens, lamb, ribs, butts, and pit bull puppies.

Why not just light a few (~20 or so) in your chimney then dump them on the unlit coals in your smoker and let it come up to temp that way?
