I agree with you, that's why I got her a Vespa first. It's mostly the turning the has her uncomfortable. Going in a straight line, she's ok.

Not willing to give up yet just hoping for tips to help.

So, is she comfortable riding a bicycle? If she's a klutz on a bicycle, she'll likely never get the hang of a motorcycle with the weight factor, speed, etc.

I love my wife, and that is why I'd never put her on a motorcycle on her own. She can drive the hell out of a car, can parallel park with the best of them, but she's bad news on 2 wheels and would wind up a stain on the roadway eventually.

Like already mentioned, some people are just not cut out for motorized 2 wheel transportation.
