Because they are terrified of under quoting due the fits people throw if it's 3 mins over. There were probably 20 groups willing to wait and if a few leave its not in of the world due to not having enough staff to serve everyone that shows up to eat.

No different than a grocery store with 20 cash registers that is only using three of them. A little like fast food companies giving discounts to encourage people to order on their app. Wages are the most expensive cost for most companies. At least they have been everywhere I've worked.

I like to try the Shrimp & Grits at every restaurant that serves it since usually each is unique. The Chimes was horrible, worst I have ever had. Everything else is frozen and fried crap. Beer selection is good.

The Anchor in madisonville is like this. They could unlock the door and have noone in there, you walk up and they are like let me check and see. Meanwhile, you are like wtf, while 30 employees just stand around.
