That’s why I tend to lean toward Sochan, a dude that is that good defensively has to have that “want it” factor. We can figure out the offensive side with him (see Herbert Jones).

Herb showed his improvement on offense in college. it wasn't a mystery when he was drafted. He went from a 50% FT shooter his first 2 years to a 71% FT shooter his senior year, and has done even better in the NBA.
Herb has good to great handles, and can finish at the rim, in college.

You have no idea if we can figure it out for Sochan. It's a yuge risk. We didn't figure it out for Herb. He figured it out before he got here, and we just helped him grow more with what he was already doing well. Sochan does nothing well offensively. great, possibly elite defender, but looks putrid on offense.

So Herb is proof that someone with elite defense and mediocre to bad offense can improve on that side of the ball?

Do you think it's easier to bump your shooting percentage up a few percentage points or learn how to play defense? When you're drafting at 8, there's going to be a risk with every player available, otherwise that player would be drafted higher than 8.

I'll take the 19 year old with elite defense, and bet that he can up his shooting percentage a few points, over a shooter who either doesn't care or doesn't have the basketball instincts to play good defense.

Nothing well? That’s an overreaction. He doesn’t shoot it well (36% in C&S situations though, which is a hair below average, and shows upside), but he’s surprisingly skilled in a lot of other areas. More skilled than he got to show at Baylor.
