Vacation photography

What kind of camera do you use when you go on vacation? Just your smartphone? Point-and-shoot? DSLR? Mirrorless? 35mm SLR?
Also, if your camera has interchangeable lenses, which lens(es) do you bring along?
I'm considering buying a Nikon D700 (yeah, I know it came out in 2008 and it has plenty of MP for me) and I'm also wondering what lens(es) would be best for upcoming vacations. I have an old Canon EOS Rebel XS and also a T2i but I hate the menus on them (sort of despise using these particular cameras).

Nikon Z50. Compact mirrorless. 2 zooms. Wide-angle and zoom -zoom

Depends. Bring the big gun if I know I'll have cool stuff, situations and time to shoot.
Otherwise just my phone.

Nikon dslr with 18-300 mm lens. It’s really versatile so I only need to bring one lens.

I shoot with a Fuji x100t. Compact and comes with film simulations pre-loaded so you can give shots a different filter based on what you’re shooting. I think they have a couple new iterations out since then but I like it.

I'm a Fuji shooter. X-T4.
The 16-55 is probably the most versatile Fuji zoom, so I'll often bring that depending on what's going on. My bigger kit is a Zeiss 12 + Zeiss or Fuji 32/33 + Fuji 90. I had an X-E3 and an X100T that I used to use for travel and I'll probably get another X100 series at some point.

At this point my phone takes such good pics that I can’t justify lugging my DLSR and associated stuff around. If I go on a photo safari I’d take the good camera and the Tamron 150-600 lens but until then it’s the phone.
