It's been with us for eons. Probably starting out gathering and eating fermented fruit as "cavemen". Then man learned that squeezing the juice out of fruit and allowing it to sit produced an alcoholic beverage after a few or more weeks as early as several thousand BC. They didn't know why the beverage became fortified with alcohol...it was just magic to them.

A rough explanation of its progress was that it was antiseptic - when groups of humans congregated they invariably polluted the natural water supply. Beer was known as something that dint make you sick.
If fact, some propose that the production of beer was the impetus for the agricultural revolution which gave rise to the feasibility of large cities, hence civilization as we know it.
