So do I need to go all the way back to the one just after that and install them all up to the present one, or use the latest one I'm assuming you linked? Like I said, I know enough to know what I know and what I don't...so this is a mistake I don't want to make.

You can install latest one.
Almost make sure the fan controller plug is inserted properly. It's possible to place them on in an offset manner.
