Arky didn't interview him. They were going established HC from word go.
Kirby DECLINED to interview with Dave Hart at Tennessee. UT didn't pass on him. Other way around.
As for AU, Kirby was asking a ton of questions about what was at the time an ongoing investigation b/c he wanted to know the potential of what he was walking into. AU, understandably, didn't feel comfortable giving specifics to someone who at that moment was at best a candidate for their job and at worst was someone employed by their rival.
Kirby has always been waiting on the right opportunity. This is it. Congrats to him.
