I'm just curious to see who's going to enter. The entry fee is $300.00 for the main contest.$ 20.00 for the mini-pot contest. :thup:

For the record Pastalaya was invented by a local Jambalaya cook the late Mr. Rogers Melancon,some gumps at a NASCAR race wanted to try pasta they were buying all the ingredients so he did it the result was overwhelming.He brought the dish to Ascension Parish and the rest is history. :thup:

A splash of soy and worcestershire sauce and Italian dressing just enough to wet the steaks.Then season heavily with LeBlanc's BBQ rub, marinade for 24hrs steaks should be room temp when grilling.Grill should be HOT. :thup:

Since your shrimp are already boiled watch the seasoning, also your gravy needs to be thick as a stew should be.If you are going to use fresh shrimp the gravy needs to be a little thicker because the shrimp have alot of water in them.I recommend using LeBlanc's Creole Seasoning you can get it at all the Payless stores around Gonzales.It's a product of 2002 World Champion Jambalaya Cook Kim LeBlanc. :thup:

Sanding the pot will have your pot in good working and cooking shape years ahead of time.Sanding makes the pot easy to clean and it cooks better.I have two 10 gal and 15 gal that I cook in each year at the Gonzales Jambalaya Festival.4 times in the finals and lost out in semis twice. :thup:

My wife gave me a manual food chopper and a measure all.I do a lot of jambalaya cooking and these will come in handy at next year's Jambalaya Festival. :thup:
