That opening post nails the best part for me — the sauce really is the star here. I had the same reaction to the bread and sauce combo being better than the chicken on its own, though I'm with Raoul on it being excellent for fast-casual. Has anyone tried making a copycat version at home? I found a Dave's hot chicken sauce recipe that gets the heat and tang pretty close, and it's made me appreciate how much of the sandwich is really about the sauce.

Boudin on the grill is hard to beat. I've started poking a couple of holes in the casing before it goes on — mine used to split open and lose all the good stuff before it crisped up. Do you do yours direct over the flame or off to the side?
