Help! I need to cook a ridiculous amount of rice

I am cooking rice to a fundraiser this week. I will have to do it in many batches. I have a full hotel pan that is 4 inches deep. I cooked a batch in the oven which was unevenly cooked. Any suggestions? Thanks!

I use a crawfish tray to help contain many messy tasks:
-cutting a watermelon
-mixing a double batch of meatballs
-seasoning a lege amount of meat
-dry brining chicken
Etc
I keep them very accessible and yes they get cut marks but they're cheap and can be replaced

GeauxT, I am debating what size Blackstone I should buy for my husband for Christmas. Do you prefer one over the other? Is there anything you miss about the 36 inch when you use the 28 inch?
