Winter trip with/for kids

I have quite a bit of vacation to use before the end of the year, so an early winter trip is in order.
I have kids ranging from 2-12 who have not traveled much.
We will be traveling by car from Lafayette, La.
Any recommendations on where to go? What I want mostly is for the kids to feel like they’ve really gone somewhere/seen something different, so no beach destinations.
Most appealing to me is southwest Colorado even though that’s a bear of a drive.
Are the mountains/hills of Tennessee or Arkansas worth seeing that time of year?
Any experience with the ski resorts in South central New Mexico? Or northern New Mexico?

Red River, NM is probably your best bet for driving and snow

Keep in mind that in December snow can be hit and miss in New Mexico and even Colorado. But it will likely still be cool or cold.
Given that, there's plenty to do still. Drive 7 hours and stay in Texas somewhere. Then hit up New Mexico. You can do Sante Fe, Billy The kid, a New Mexico ski resort, etc. Along with some state and national parks.

the smoky mountains aren't as impressive as the Rockies, but it's a shorter drive. Gatlinburg/Pigeon Forge is a tourist trap in some respects but great for kids. You could also do Asheville, NC that's a comparable drive, about 11-12 hours.
IF you don't mind the drive, NM and Colorado are both great options.
