Headed there in January (sans kiddos) and curious on your favorite restaurants for those who have been.

Just you and the wife? Dinner at Game Creek Club Restaurant is a must, if you can get a reservation. It's private during the day, but open to the public for dinner. You take the gondola up from the village, then snowcat down into Game Creek Bowl to the restaurant. Best if you go for drinks before dinner to catch the sunset.
ETA: I would go ahead and call them to inquire about a dinner reservation in January.

Make sure you eat dinner one night at Mountain Standard. It is a must visit every time we are there. You will need reservations many days in advance, especially if trying to go on a Frid / Sat night.
As someone already mentioned, make sure to hit up The George too.
Red Lion get's pretty wild for apres ski drinks. Always a great time but get's really crowded from about 3 - 5:30pm.
Vail Brewing Co. makes some solid beers. They are famous for the Hot Mess Blonde ale.

For a nice dinner, Sweet Basil is great - a Vail classic. Mountain Standard also great, but more casual.
