Any recommendations for a late 30s couple with a few days away from the kids? Looking for a mixture of quiet, maybe some rivers/lakes, hiking, breweries, restaurants, etc. Mostly just hanging out and relaxing but don’t want to get too bored. Really want to be in a place with nice scenery.

Do you want to stay in a town like Fredericksburg or way out with no cell phone service? I just spent a week out there and most breweries and wineries are closed except for curbside pickup. Fredericksburg Brewing is open but its mediocre beer. There are restaurants open but many have limited hours/days open. Thursday- Sunday is the best time to catch most restaurants open. For hiking in state parks, reserve a few weeks ahead of time as they are limiting the number of people admitted and the slots fill up quick. Perdenales Falls state park has a bunch of good hikes but get out there early to beat the heat. I can't recommend a specific place as I get to stay on my brother's inlaws ranch.

it seemed like a lot of the winery's were still open around fredericksburg last weekend

schlitterbahn is open by reservation in new braunfels

I was just there this past weekend.

I don't believe any places are actually doing tastings.

Grape Creek is open for dining and you can buy wine to enjoy on their patio. I would highly suggest a reservation. When we passed by there, the line was LONG!

William Chris (in Hye) is allowing you to purchase wine and sit in their chairs outside. It's very pretty and there were quite a few folks social distancing there.

Most places have only pickup.

Pedernales is nice if you go early. We drove out to Lost Maples and hiked a bit. It's almost an hour drive, but it was a really nice drive. If you want to go to a state park, you will need to pay for your spot before you go as they are limited and do sell out.

There are lots of old houses, new cabins, etc. that are out in the country. We brought groceries, wine, etc. and hung out at the cabin. We sat out at night and looked at the stars, etc. It was a nice getaway. But not a lot to do, if you are looking for that.

Is it better to fly to either Austin/San Antonio or drive in (6.5 hour drive from here). Wife is interested in going to the hot air balloon festival in early December. Anyone been to it before?
