Going for a week in May. Has anybody been and have any activities, restaurants etc that they think a person should definitely see/go to?

Lot of old buildings, if you're into that. Ton of flower farms in that region that export internationally. Look into a tour of farm nearby.

No Spanish. Just a few guys that all speak English. I know for a place that uses the dollar as their currency English isn’t exactly widely used.

We stayed at an Airbnb in the old part of the city. It was awesome. Ton of stuff to walk around and do -- also very cheap.

Ecuador can be a dangerous place. Just be careful. Don't use random taxis to go places. Stay in crowded areas. This was our favorite part of Quito:

You go up the cable cars and then try to hike up the mountain. The hike takes about three hours and is super difficult because you're nearly 3 miles high. 10 steps feels like you've walked a 100. Awesome scenery. Highly recommend. If you do it, bring some hiking shoes. The weather changes rapidly that high and only follow the route where you see people going. We went the wrong way with a group of Canadians for about an hour -- thankfully a group of natives found us and brought us back.
