One week in Paris

I know this is a very broad question, but how much should be budgeted to stay seven nights in Paris? Hotel, food, attraction admissions, etc. Nothing fancy, nothing that's a dump. Plane fare not included.

A large part of that depends on when you are going. Paris can have fluctuations in pricing depending on the season and what's going on in the city that week, more than a lot of cities. Certain parts of the year can be much more expensive than other parts.
You'll want to stay in one of the inner arrondissements if you're a first time visitor to give yourself much more access to the sights (as well as safer areas).
For a nice, centrally located place you are looking at 1500-2000 approximately for fairly basic accoms (but good locations). You can get a little less expensive (but honestly not that much) if you travel a little farther out or get down in quality. You can also get WAY more expensive in Paris trust me.
Edit: I plugged in a random week in March and those prices held up. If you went farther out from the tourist area I saw some decent places at 800-1200

Paris is awesome but so are other areas in France. Would you consider visiting Normandy or the Loire Valley in between Paris?

When I go to Paris I budget as much as my credit card can hold.

For two people on a mid-range budget I would plan on spending $2500 - 3000 depending on the time of year, how nice you want your hotel to be, how much you eat and what you plan to do.

TIme of year is important, where you want to stay is important, how nice it needs to be is important, etc.
Food budget is also extremely flexible. There's some great eats in Paris and most big cities that are very affordable, there are grocery stores all over with quick bites the locals eat all the time.
A basic dinner is really no different in price than in the USA, I'd budget $50 per person for a basic dinner and 1-2 glasses of wine. That's an avg meal, an appetizer, and a bottle of wine. But you can easily spend $500 if you want.
