I would find it hard to believe 2 high school teachers could afford a 32 night south pacific vacation. This has got to be a $20-25k trip, and that's trying to be frugal.

It will end up being around $30K according to our pretrip calculations but, we've found cheaper flights and had an excursion canceled since the original budgeting.
If you would like a breakdown, airfare was $2,400 per passenger (originally $3,000). That's 12 flights for 5 people or $12,000.
We're using a lot of our Titanium Elite Marriott points for hotels. We're only paying for lodging in Fiji $400, Manly $1,000, Hobart $900, both NZ stops $1,400, & Bali $1,000. We would have used points for Bali but it was cheaper to pay out of pocket. That means Sydney, Fiji both stops & L.A. both stops we secured lodging on points.
Add about $10,000 for food, souvernirs, & activities and there's the budget.

Monday was day 11 of the trip. (EDIT: Sunday, not Monday). The wife and I had a date night at a highly rated local restaurant in Manly. The Arsonist prides itself on the fact that each dish contains at least one component that was prepared using live fire.
The kitchen:
We opted for the set menu:
Amusé: Smoked Sourdough, Anchovy, Pecorino
Nothing special but it did prepare my pallet for things to come.
Rye Sourdough Smoked-Brisket Fat Butter
The butter tastes like meat. It was so F'king good.
Yellowtail Kingfish Crudo
Very tasty, great complimentary & contrasting flavors.
Grilled Octopus Skewers
Really f'king good. Crispy exterior with soft & tender center. Wish I had 20 of these.
Grilled Scallops
Good, not great.
King Prawns
Well executed dish. I sucked the heads.
Roasted Pumpkin
This could have been served as dessert or a cheese course. Wasn't overly sweet but had great composition and complimentary elements. The toasted cumin & fennel seeds really made the dish pop.
The steak, duck, tomato, & mash were served together as a course.
Wagyu
This Sirloin melted in your mouth. I put the smoked brisket butter on it along with the jus.
Duck
Foie Gras mousse...
Burrata
Nice acid to break up the richness of the meat.
Mash
They served this with an unhealthy amount of the brisket fat butter & jus.
Dessert
This creme brulee was too big & the sugar crust was too thick.
The custard seemed a little overcooked.
The smoked cruffin was phenomenal & didn't need the passion fruit ice-cream.
Our 10 year anniversary is coming up so they gave us a candle.
Overall, one of the better meals I have had in a while. It didn't look like a lot of food but we didn't leave hungry. Couldn't finish some of the dishes and the desserts.

Haven't been able to update for a bit...
After a week in Manly, we hopped the ditch to Tasmania. We planned two nights in Richmond at a Farmstay and three nights in Hobart.
We rented a vehicle and headed out of the airport for Richmond. We hired a Kia Carnival which is their third-row option, not available in the U.S.
Our first stop was at Smith's Pies, conveniently located just 6K from Hobart International Airport. A small, unassuming little bakery in an industrial looking area. Tradies were tucking into pies when we arrived which was promising. Pretty cheap and delicious after our flight. We ordered the Curried Scallop (Undoubtedly one of Tasmania's favourite dishes.), Steak & Mushroom, Steak Bacon & Cheese (my personal favorite), Steak & Cheese, and a Mince.

All pies had a good flaky crust and well-seasoned, flavorful filling.
Stopped at a couple of wineries on the way to our lodging.
Pressing Matters - good pinot, nice whites
Puddle Duck - cool playground, heaps of ducks, and the occasional coot(pouldeau). Meh wines.
Every Man and His Dog had a decent cab but everything else was pedestrian.

At least they had good pizza.
The Farmstay was adjacent to Kilara distillery that makes whisky & gin. Abo & Shavonne were awesome hosts and hooked us up with free tastings, cocktails, & a bottle of whisky.
On our last day we hung around Richmond which is home to the oldest bridge in Tassie. We also took the kids to the Pooseum, a museum dedicated to animal defecation & to Amaze, an interactive maze.
That afternoon we returned the car to the rental and hopped on the Skybus to Hobart.
