Epic Chophouse in Mooresville for dinner.
If you're into adult go-carts, can't beat Go-Pro Motorsports for a fun activity.

UNC is a beautiful campus and downtown Chapel Hill is pretty awesome.

Mooresville is in the western part of the state....Morrisville is near CH, Raleigh, and Durham. Only pointing this out in case you search for something to do on the inter-web :-). It really is going to depend upon your age and interest to determine where you have the best time. Chapel Hill is mostly a college town... there are a few nice restaurants but for the most part it's a younger crowd. I would highly recommend making the trek to Raleigh and heading to Glenwood South area… Near downtown. Plenty of restaurants and clubs to choose from… Much more so than in Chapel Hill. Highly recommend Sullivans. I live in this area so if you have any other questions feel free to fire away.

Do you drink beer? If so, there are a LOT of microbreweries all over this area and most make really good beer. You could either head to the breweries themselves which will usually have a food truck outside, or go to a bottle shop which will have their favorite beers on tap or sometimes chilled bottles.
Overpriced for what you get and you have to eat in a Barn.
Duke University in Durham isn't far and it has nice gardens and a magnificent chapel. The campus is really nice as well.
Honestly there isn't much I know about to do in Morrisville. There are some decent places to eat like Five Guys and probably some really good Indian. Cary has better places with Full Moon Oyster Bar, Blaze Pizza and Duck Donuts.
Definitely head down to Franklin Street in Chapel Hill. Plenty of bars and restaurants there. If you're looking for more local stuff, keep going just a short way to Carborro. Yelp is your friend. The football stadium is usually open if you're wanting to look around or have a chuckle.

Baxter Arcade - Next door to Beer Study (barcade)
Mediterranean Deli - great Med food
Top of the Hill - locally famous sports bar
Rise - Donuts and Biscuits
Al's or Buns - great burgers

There is a UNC basketball museum near the Smith Center, and a smaller football museum at the field house at Kenan Stadium. Campus is pretty this time of year. There is also one at Cameron Indoor in Durham.

Go to Top of the Hill and sit at a table on the patio overlooking Franklin St. Drink a few pints and admire the scenery.
Most of the bars and restaurants have changed names and ownership a half dozen times since I graduated but Top of the Hill, He's Not Here (drink a blue cup on their shitty patio too), and Time Out (order a chicken cheddar biscuit or a bucket of bones and check out all of the pictures on the walls) were all still there as of last August.
