Japan Recommendations (besides Kyoto and Tokyo)

Planning my next trip to Japan. I've been to Kyoto and Tokyo and plan on seeing those again briefly, but want to hit up a couple other destinations. What are the other must see/must do things in Japan. Will be there over Christmas.

I loved Osaka. I've heard good things about Hiroshima, but I haven't been. Check out Fuji if you can time the weather and get there when it's not cloudy.

Did two weeks in Japan earlier this year. Try out Osaka and then hit up Nara. We were in Osaka for a few days then when to Kyoto. Osaka was more modern, fast paced business culture had good food scene and seemed to have good nightlife. We didn't get to go to Nara but want to next time. We loved Kyoto and we were being told that Nara is similar.
We did Okinawa too and if we were to do it again would probably skip this. Kinda just felt like every other nice beach.
Mt. Fuji was cool, the weather was actually good when we went and got to see the top. We stayed at a traditional Japanese hotel on Lake Saiko. Also hiked that forest at the base of Mt. Fuji. Forget the name but it's known as a common place to commit suicide. Kinda eerie but beautiful, it is where Mt. Fuji last erupted so its a forest that has grown through the lava field.
I know you said you have done Tokyo but if you end up back there try and go to the Epson teamLab

Hokkaido in winter is as beautiful as it gets. Something about the architecture laid against the snow capped mountains and you have no doubt where you are in the world. Absolute winter heaven. Highly recommend the Otaru Canal at night for the lights and all the restaurants and yakitoris. Everything accessible by trains of course.
Oh man I want to go !

Osaka was really cool
If you can get down to Hiroshima, it's worth the visit. Also, some good food options there (Okonomiyaki).

There is an island called Aogashima that is only accessible by helicopter or ferry. It's an active volcano! There are no restaurants but there are 2 Izakaya and the main industry is Shochu production. There is like one hotel on the island and you cook food outside in holes. Obviously, it's on our Japanese bucket list. Unfortunately, we'll be there in the winter so I don't know how the conditions will be for a helicopter ride.
I would actually love some recommendations for Kyoto and Osaka. We have another trip planned for January and want to branch out a little bit farther.
We stayed in Zushi (family is military so we stayed on base) but ventured to Yokosuka, Kawasaki, Yakohama, Tokyo (4 times, 4 different districts...Ueno, Shibuya, Harajuku, Asakusa), and Mt. Fuji...which was amazing, obviously.
We will be there for 15 days and are only an hour south of Tokyo so we will hit up some of the districts we haven't visited before, but also want to travel the country a little bit.
