January vacation ideas? (no skiing)

Me and the gf finally have time for a week long vacation the first week in January. We’re not into skiing and went to Mexico our last vacation so looking for more of a winter destination but not MISERABLE cold. Was thinking somewhere overseas but won’t rule out the US either. New York was the original plan but we’ve kinda gotten away from that idea because of the covid stuff. Most recent ideas have been Bruges or Switzerland but still undecided. Any ideas?

Side notes: 30 year old couple, like to drink and have fun as well as sight see, will spend up to $6k

Ireland isn't miserably cold and that's the off season which is more enjoyable.

Plenty to sight see and plenty to drink.

It's geographically the size of Louisiana so you can do several day trips or bounce around a few cities and just stay in them and sight see.
3-4 nights in galway, 2-3 nights in Kilkenny, 3 nights in Dublin. And you'll have a great trip.
