ISO Family-Friendly All-Inclusive in Cancun

Several families looking at making a quick (3-night) trip to Cancun in October when the kids are out of school for a long weekend.
Must be on a good beach. Prefer it to have a kids' club where the kids have supervised activities and adults have some time to themselves. Entertainment (nightly shows?) would be nice as we don't plan to leave the resort except to ferry over to Isla Mujeres (which is where I wanted to stay, but it didn't work out for this trip).
I'd say we are looking for a "value" (mid-priced?) resort. Not super high end/ luxury, as we want as many families as possible to be able to afford to come. But not a rundown place with bad food, either, because a bad vacation is no bargain regardless of price.
We are well-traveled, but this is NOT the way we usually vacation. I've never stayed at an AI in my life, but this is the route this group wants to go this time.
Any recommendations? Or should I just find one that's within budget, check Tripadvisor reviews, and roll the dice on the basis that we could probably deal with any AI down there for 3 nights?

This. I have never been but we were slated to go until COVID hit last year. It has something like 4,000 reviews and 4.5 stars.

We went over Thanksgiving and really enjoyed it. Makes the 4th different Paradisus resort (Punta Cana, Cabo, Cancun, Playa) we've stayed at and have liked all of them.
