Greece (Athens, Meteor, maybe Delphi) recs

Im getting off of the Brilliance of the Seas on August 24 in Athens after a week going starting in Rome (Naples, Sicily, Santorini, Ephesus, Mykanos). I have budgeted 4-5 nights in Greece before coming home.
Other than the markets, neighborhoods, and Acropolis, there isn't that much in Athens that excites me. Friends tell me to go to Meteora and Delphi. If I leave from Athens early on Wednesday, should I fly home on Saturday or Sunday? (Saturday is preferable)

I just got back a few weeks ago from a Viking cruise that started in Athens.
I climbed up Acropolis Hill to the Parthenon. I highly recommend doing that if the weather is nice.
My wife stayed in the museum at the bottom of the hill because she didn’t want to do the climbing over uneven terrain. She gave positive reviews of the museum.
At the foot of Acropolis is the Plaka District, the historic Old Town neighborhood of shops, restaurants and cafes. That is a nice neighborhood to stroll around and if I had to stay in an Athens hotel I would want it to be there. But I wouldn’t venture too far from there because, unlike most European vacation destinations, Athens is not a place where you can walk for miles and enjoy beautiful scenery and architecture. At least not in my experience.
Oia, Santorini is beautiful. The town is atmospheric and the scenery is gorgeous. We were there on a clear day in April when the tourist traffic was pleasantly light.
If you are looking for a beautiful and relaxing place with not much to do, check out Hydra. We flew to Athens three days early and took the ferry to Hydra which we chose because it is only an hour and a half ferry ride away from the Athens port.
