Florence/Tuscany area Vineyard Recs

Going to try our hand at international travel this year with a trip to Italy early October. Looking at an itinerary of Rome - Florence - Venice. We've got a lot of the trip ironed out (thanks to the TD Travel Board), but one thing we are having trouble pinning down is the best way in which to do a day trip to some of the vineyards in the Tuscany region.
I've spent some time sorting through some of the old threads on here looking for ideas, but having a hard time finding consensus on the way of doing it. My wife and I are going for our anniversary, open to any recs. Looking to make a day of it. Is it better to book direct with a vineyard and find a way to organize travel? Anyone had any luck with a specific tour group that organizes the trip and provides transportation? Preferably small group. we don't want to spend all day travelling on a bus. 1 or 2 spots would be plenty. seen some good talk about pairing it with cooking class or horse back riding.
first timers here so forgive any ignorance! Appreciate any and all advice you all may have!

How much time do you have in Tuscany?
If you just want to have a one day guided tour of Tuscan wine country, call this guy LINK
Dario is an excellent tour guide as well as a bestselling author. We took two of his tours. The highlight was a behind the scenes of the Palio tour in Siena which included a tour of the Caterpillar Contrada clubhouse which few people get to see.
If you have a week or so in Tuscany and rent a car, I made some recs in the recent threads.

Rome by Limo
If that’s not your speed, Marriott actually has several day trips with pick up/drop off from Florence. 2-3 wineries and schedules everything for you. But you are in a group of people so cheaper but not private. Rome by Limo is private

There’s a fantastic enoteca in Greve. Other than La Fortezza in Montalcino it’s my favorite.

We're just in Florence we're three nights, so thinking a day trip to the Tuscan wine country is all we'll be able to manage if we want to see the rest of the florence area

I should clarify we are trying to do this as part of the Florence portion of the trip

Yeah. You just mentioned my two favorite wine bars/wine stores in the world. The one in Greve is Enoteca Falorini. They invented and hold the patent on those machines that accept the debit card and spout out the wine. They have about 120 of them in there.
The other one is fantastic too. Leave it to Tuscany to put a wine bar in a historic, centuries old fort.

Cool Tours by Anna.
My wife and I loved the day. Went to 3 wineries.
She’s also a trained sommelier.

I second cool tours by anna, My wife and I did a private Brunello/Montalchino tour and it was incredible. She's great and knows her wine.
