Extended weekend getaway for anniversary

Thinking about flight/hotels to somewhere still in the country for an extended weekend, say a Thurs-Sun. I was thinking somewhere with a different landscape than most of the Southeast. Somewhere like Denver, Seattle, maybe somewhere in California like San Diego. Don't really want to do anything all that involved besides hit downtown, the restaurants, see a few sites, etc.
