Walk the old course even if you are not a golfer. Walk around the little village of St. Andrews.

the fringe festival will be going on, so i would highly suggest just taking part in as much of that as you can.
the castle is definitely worth seeing.
try to get to the lowlands if you can.
eat some haggis.
go to pubs.
go see their parliament. it's amazing. take a tour of it. well worth it.
try to find a walking tour that will tell you about the history of the city. it's the most beautiful city, and one of my favorites in the world.

Rent a car and drive up the coast to visit the Dunnottar castle. Besides that visit any castle, tons of them, drink scotch, talk shite about brits

General advice:
Rose Street pubs
Drink (or stay) at Balmoral
Royal Street walking, tours
Castle, Royal Mile, Old Town
Royal Mile Whiskies
Live Music at pubs, cowgate area (?)
Princes St if shopping
Great train or car excursions (incl golf) within 90 minutes, eg, ride over Firth or Forth bridge & snap photo
