Day 1: Arrive at resort in Scottsdale in the morning. Chill day, not a whole lot planned maybe go check out Taliesin West.
Day 2: hike camelback mountain, horseback riding at Macdonald’s ranch, upscale dinner, bar hop in old town
Day 3: Drive up to Flagstaff for the next few nights. Check out Fossil Creek on the way up.
Day 3: Sedona Jeep tour
Day 4: Grand Canyon tour
Day 5: Fly out

That’s a lot of driving on a tight itinerary. Keep in mind it’s a 2+ hr drive from Scottsdale to Flagstaff and another 1.5-2 to the GC. I’d stay in Sedona over Flagstaff.
Honestly, I’d stay the whole week in Flagstaff/Sedona. You can do everything you want to do in Scottsdale in Sedona except for the bar hopping. Scenery is better too.

Thanks for the recommendation, unfortunately Scottsdale is a requirement, no getting out of it. Maybe cut out Grand Canyon?

I wouldn’t recommend more than a night in Flagstaff. There isn’t really much there. The one thing I’d recommend in that area is to check out the lava river cave. Bring warm clothes and flashlights because you won’t be able to see a damn thing without light. It’s one of the coolest things the wife and I have experienced.
Stay more than one night in Sedona. Absolutely beautiful area and plenty of hiking opportunities. Pretty good food all around there too. I wouldn’t waste time with the little market they have there unless you’re an OT baller.
Make sure to take the scenic route from Sedona to Flagstaff via 89A rather than I-17.

I'd agree with the multiple days in Sedona area. Then you can hit up west fork of the oak Creek canyon for a nice easy hike with nice views.
You are also close enough to see some nicer wine tasting in the general area as well

Skip Flagstaff and drive to Zion National Park in Utah. Absolutely awesome.

Given that Scottsdale has to stay on the agenda, yes. Stay in Sedona. There’s a ton of breathtaking views there and you’re in the middle of it in Sedona. At the GC, you’re just looking down into it. Lots of tourists coming over from Vegas, too.
Agree with other posters that there’s not much to do in Flagstaff. You’d be better off basing in Sedona and heading over to Cottonwood or Jerome for a day trip.
In Sedona, try one of Lisa Dahl’s restaurants:

Less Flagstaff. More Sedona

This.
And I'd skip the Jeep tour. Pink Jeep has access to a couple of places the public can't get to, but everywhere else they go you can get to yourself by hiking.
And definitely do an early morning hike up to Cathedral Rock.

We just did a similar trip in October.
We stayed in Cottonwood for 4 nights and Flagstaff for 2 nights. (then headed up to Utah). It's definitely an area for hiking and outdoors activities.
There is a ton of nice hiking in the Sedona area for all ages. I'd recommend looking at AllTrails for hikes.
If you can hike down into the GC. We did a short 3 mile down and 3 mile back up from Bright Angel Trailhead.
Like the previous poster said it's a 90 minute drive to GC from Flagstaff.
Have fun!!
