Euclid Hall in Denver is worth a stop. It's been a while since I've spent any time there, so having a hard time recalling other places. Will ping my friends out there and add anything if I get a response.

Wynkoop Brewery was a neat spot as well. They have a caffeinated beer called "Kurt's Mile High Malt" that is said to be a recipe that came from Kurt Vonnegut's Grandfather I believe?

Aspen:

Breakfast

Eat every breakfast at Poppycock's Cafe. Get the oatmeal pancakes, they are life changing. This place is about as unassuming as you get in Aspen.

Lunch

New York Pizza
J-Bar
Meat and Cheese Restaurant and Farm Shop

Dinner
White House Tavern
Matsuhisa (sushi)
The Wild Fig

Denver:
Acorn, we tried this place at the suggestion of others and loved it. A bit upscale but the food was great. We were with a group so we split some things, we had the kale & apple salad, beef tartare, maitake mushrooms, royal red shrimp, and the meatballs. All were great.

If you go to Acorn you can also go to Crooked Stave Brewery, they're in the same building.

Hops & Pie, damn good pizza and a massive selection of beers

Matsuhisa is NOBU. They had to change the name in Aspen.

Nobu Matsuhisa is the chef/owner of that empire (with significant funding from Robert DeNiro). So, yes, it’s the same but Matsuhisa is his flagship sushi restaurant.

With that said... if you just want a great burrito joint, Illegal Pete's is bomb. I always went to the one in Boulder when I lived up in Estes, but they have multiple locations in Denver it appears. Add the Pork Green Chili... and let them mix it before they wrap it... as all burritos should be.
